If a photographer you want to book cannot provide a contract, at minimum request a written confirmation by email: the date, the services included, the delivery timeline, the total price, and the deposit paid. Professional photographers working at a serious level will always have a contract. Its existence and quality is a reasonable proxy for the professionalism of the overall service.
If you have specific requirements not covered in the standard contract — a particular list of must-have shots, specific restrictions on portfolio usage, or an agreed timeline different from the photographer's standard — these should be documented in writing as an amendment to the contract or as an explicit addition. Verbal agreements are unenforceable. If it matters, get it in writing.
